Vegan Peach Crumble

A not too sweet baked peach crumble that is so delicious and it’s vegan too! This crumble is made with oats, coconut flakes, almonds, almond butter, and cinnamon. It is perfect served warm with some vanilla ice cream. Yum!

Ingredients

Peach Base

  • 10-ounce bag of frozen peaches (about 3 fresh peaches, sliced)
  • Juice of 1 lemon
  • 1/2 tablespoon of water
  • 1 tablespoon of arrowroot powder (or cornstarch)

Crumble Top

  • 1/4 cup of rolled oats
  • 1/4 cup of dried coconut flakes
  • 1/4 cup of sliced almonds
  • 1/4 cup of sugar
  • 1/4 teaspoon of ground cinnamon
  • 1/4 cup of almond butter
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°.
  2. Make the peach base: in a small bowl mix together the peaches, lemon juice, water, and arrowroot powder. Pour the mixture into a small glass baking dish (like a 7×5 Pyrex dish).
  3. Make the crumble: add the oats, coconut, almonds, sugar, and cinnamon to a bowl. Mix together until evenly incorporated. Add the almond butter, and vanilla extract. Mix together by hand to fully incorporate that sticky almond butter throughout. This should be a dry crumble.
  4. Add the crumble mixture on top of the peaches. Pop it in the oven to bake for 45 minutes.
  5. Serve warm with some vanilla ice cream, my favorite is SO Delicious Vanilla Bean made with coconut milk. Yum!

Notes

Keeps in the refrigerator for up to 5 days. Best warmed up!
