Peaches with Cinnamon Oat Crumble

If you live in Colorado then you know we love our peaches! Late summer every year you can find pop-up peach stands all across the State. My kids and I love to stop and get some for a delicious snack while out and about. This vegan peach crumble is the perfect cozy dessert. I love to make it in the fall, right when the weather has cooled down enough to use the oven again! Plus you can make it in a snap (less than 10 minutes), and no mixer is needed.

You can use fresh or frozen peaches for this recipe, but we usually use frozen, only because we all love to enjoy all our fresh peaches raw or grilled. We also don’t add any extra sugar to the peach mixture, we prefer the delicious simplicity of just baked peaches. Top it off with a tasty crumble made from oats, coconut flakes, sliced almonds, cinnamon, sugar, vanilla extract, and almond butter. I like to just mix everything together with my hands since this is a dry crumble and the almond butter is a little tricky to stir in. And that’s it! No eggs, no butter, and yet still amazing. The almond butter adds enough moisture and fat to make this crumble work perfectly. Pop it in the oven and enjoy the sweet smell throughout your whole house!

 

 

This yummy dessert is lower in sugar and made with nutritious foods (peaches, oats, coconut flakes, almonds, almond butter) but it is still a sweet treat, meant for small portions and eaten in moderation. I like to make a small batch of this up so there is not too much temptation lying around the house.

Funny story. We planted a peach tree in our yard last fall and we were so excited to have about 9 peaches growing on our little tree this year. We were all watching the peaches very closely and waiting for them to finally be ripe. My three-year-old son, Otis, asked almost everyday “Mom, are they ready yet?”. You know because that’s what three-year-olds do. Anyway, in August we went on a week-long camping trip, and I remember thinking to myself when we get back those peaches are finally going to be ready! What should we make: crumble, smoothies, muffins, grilled, or just enjoy their deliciousness of fresh home-grown peaches? Well, we never had that dilemma, because when we returned from our trip the squirrels had eaten every single peach. Not even a pit lying around! I guess there is always next year, and if anyone has non-violent tricks for taming pesky peach eating squirrels do share!

Vegan Peach Crumble

A not too sweet baked peach crumble that is so delicious and it’s vegan too! This crumble is made with oats, coconut flakes, almonds, almond butter, and cinnamon. It is perfect served warm with some vanilla ice cream. Yum!

Ingredients

Peach Base

  • 10-ounce bag of frozen peaches (about 3 fresh peaches, sliced)
  • Juice of 1 lemon
  • 1/2 tablespoon of water
  • 1 tablespoon of arrowroot powder (or cornstarch)

Crumble Top

  • 1/4 cup of rolled oats
  • 1/4 cup of dried coconut flakes
  • 1/4 cup of sliced almonds
  • 1/4 cup of sugar
  • 1/4 teaspoon of ground cinnamon
  • 1/4 cup of almond butter
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°.
  2. Make the peach base: in a small bowl mix together the peaches, lemon juice, water, and arrowroot powder. Pour the mixture into a small glass baking dish (like a 7×5 Pyrex dish).
  3. Make the crumble: add the oats, coconut, almonds, sugar, and cinnamon to a bowl. Mix together until evenly incorporated. Add the almond butter, and vanilla extract. Mix together by hand to fully incorporate that sticky almond butter throughout. This should be a dry crumble.
  4. Add the crumble mixture on top of the peaches. Pop it in the oven to bake for 45 minutes.
  5. Serve warm with some vanilla ice cream, my favorite is SO Delicious Vanilla Bean made with coconut milk. Yum!

Notes

Keeps in the refrigerator for up to 5 days. Best warmed up!
