Mint Watermelon Juice

This juice is so simple to make and absolutely refreshing on a hot summer afternoon. My kids would drink it every day, if only we had enough watermelon!

This is certainly at it’s best with deliciously ripe watermelon, but it is also a great way to use up a not so great watermelon. If you cut into a watermelon and it is too ripe( almost powdery) instead of wasting it, make it into some mint watermelon juice and use that thing up!

I almost didn’t write a recipe for this because it’s so simple, but my kids just love it and sometimes the best things in life are ever so simple. In just 5 minutes you can be drinking down a healthy and refreshing whole foods beverage. Oh so good.

Delicious plant-based watermelon juice with fresh mint. This juice is sweet and refreshing at any time of the day. With only 3 ingredients and no added sugar, this is super easy to make. A tasty and healthy beverage, yum!

Ingredients

Scale
  • One small seedless watermelon
  • 6 ice cubes
  • 1 cup of fresh mint leaves, roughly chopped

Instructions

  1. Cut the watermelon into large chunks that will fit easily in your blender. Make sure to remove the watermelon rhine.
  2. Add a couple of chunks of watermelon and fresh mint leaves to the blender. Blend on a high-speed setting to puree the mint leaves. 
  3. Add the rest of the watermelon and ice cubes to the blender. Blend on high until smooth.
  4. Pour into glasses and serve immediately. Yum!

Notes

Can be stored in the refrigerator for about a day.
