Vegan Gnocchi

A deliciously simple four-ingredient vegan gnocchi recipe. Truly the easiest pasta to make!

Ingredients

Scale
  • 3 large Yukon gold potatoes, (about 4 cups once baked and peeled)
  • 2 cups of flour
  • 3/4 teaspoon of salt
  • Dash of nutmeg

Instructions

  1. Cook the whole potatoes in the microwave for about 5 minutes, or until cooked.
  2. Once cooked, cut the potato in half and scoop the potato flesh out of the skin and toss it in a medium-sized bowl.
  3. Add the flour, salt, and nutmeg to the bowl. Mix all ingredients together, you may need to use your hands to kneed since this is a dry dough. Mix until everything is incorporated into a single dough ball.
  4. Flour a work surface, break off about a 2″ round chunk of the dough ball. Using both hands, roll the dough ball into a long snake-like shape. Make a cut about every inch, and there you have it homemade gnocchi!
  5. If you want this to look really authentic grab a fork and roll it around each piece of gnocchi to give it the signature texture.

Cooking Instructions

  • Toss the gnocchi into a pot of boiling water, cook for about 3-4 minutes or until gnocchi are floating on the surface of the water. Drain and serve!

Or…

  • You can fry these as well. Toss 4 tablespoons of olive oil into a saute pan. Once the oil heats up add the gnocchi, cook until lightly browned on each side, about 3 minutes per side.
