There is not a better condiment than a good ole green herb sauce to slather on really anything—falafel, tacos, toast, you name it. I love this stuff so much, it’s tempting to just drink it. Only kidding. But it is really that good. It is a great way to add a flavor kick to just about anything. I especially love it on a falafel wrap and tacos. My kids even like it too. Move over, ketchup, there is a new colorful sauce in town!

The ingredients to make this green herb sauce can be really flexible. You can substitute fresh herbs with whatever you have, skip the jalapeno if spicy is not your thing. Also, swapping the apple cider vinegar for lemon juice is a nice option. When I make this sauce, I just start tossing what I have in the blender. Some variations are better than others, but those fresh herbs are going to take center stage and make this delicious. I do love the flavor the capers add, but if you are aiming for low sodium skip those.

Health Benefits of Parsley

It’s no surprise that parsley is super good for you. I mean it’s a leafy green plant, some people even drink parsley juice as a health hack. Parsley is high in vitamin A, C, and K. According to Healthline, parsley is is rich in antioxidants, has anticancer effects, and supports bone health. One study found that higher vitamin K intake was associated with a 22% lower risk of fractures. How cool is that?

Health Benefits of Cilantro

Parsley is no doubt good for you, but cilantro may be even better. Healthline says it is rich in immune-boosting antioxidants, can help lower blood pressure, and has anti-inflammatory effects that protect memory health. Not only does this green herb sauce taste amazing, it is super good for your body. Did you know that in most parts of the world cilantro is called coriander? Here in the US coriander is typically just used for referring to the seeds, but in many places coriander can refer to the whole plant.

How to Make Green Herb Sauce

If you can make a smoothie, you can handle making this delicious sauce. It is really quick and easy. Just toss all ingredients into your blender, blend on high until smooth and voila! The recipe calls for a “bunch” of fresh herbs, I just toss in a whole bundle from the grocery store. If using fresh herbs from home about 2 cups should suffice. If you don’t have quite enough parsley, you can increase the cilantro, or visa versa. Or go crazy and add a completely different fresh herb like tarragon. Yum!

Ingredients

Scale
  • Bunch of fresh parsley
  • Bunch of fresh cilantro
  • 1 tablespoon capers
  • 1 garlic clove
  • 2 tablespoons of apple cider vinegar
  • 1/2 jalapeño (whole if you like it spicy)
  • 1 tablespoon honey
  • 2 tablespoons of olive oil

Instructions

  1. Add all ingredients to a mixer and blend until smooth. Add a little bit of water if necessary to blend.

Notes

Keeps in the refrigerator for up to 5 days. Can add chili flakes after blending to increase the heat. Option to use agave nectar to make it vegan.
