Pink Onions – Pickled Onions

Making street tacos at home is actually easier than it seems, but you’ve got to have the right toppings. Pink onions – pickled onions are a must, it’s not a taco without pickled onions! Plus these are just so easy to make and they last for a while in the refrigerator so you can always have some ready. And who doesn’t love the bright fuchsia color of pickled onions? My kids almost eat them just because they look so pretty. Almost.

Like almost all vegetables, onions are a nutrient-dense food. According to Healthline.com onions are full of vitamin C, B6, folate, antioxidants, and potassium. Some studies show that eating onions can help your heart, decrease chances of stomach and colon cancer, may boost bone density, and improve digestion. Onions are prebiotic, which means they are especially good for your gut. Prebiotics are basically food for good gut bacteria, you know that probiotic stuff everyone talks about. Plus pickled onions are technically still raw so they retain all of their nutrients, unlike cooked onions. Add some fuchsia to your tacos and you’ll feel good about it!

Yup, it’s true. So when you have an option to choose the white onion or the red, always choose the red onion. A red onion has 11 times more antioxidants than a white onion. Colorful fruits and veggies have more antioxidants and nutrients. The same goes for red cabbage vs. green cabbage, iceberg lettuce vs. spinach, sweet potato vs. russet. When grocery shopping aim for the rainbow: a super colorful variety of fruits and veggies.

Ingredients

Units Scale
  • One 12ounce wide mouth mason jar
  • One red onion, super thinly sliced
  • One tablespoon of sugar
  • 1/4 teaspoon of salt
  • 1 cup of vinegar

Instructions

  1. Add onions, sugar, salt, and vinegar to the mason jar.
  2. Put the lid on and give it a good shake to mix everything up.
  3. Set aside for at least 2 hours before serving.

Notes

A jar of pickled onions will keep in the refrigerator for about two weeks.
